Wondering how to store food long term? Today's topic is all about food storage done the right way and some prepping tips to help you be prepared and have enough food to last for you and your family... For months!

Here are today's questions:

1. How can we prepare fresh produce for long term storage? I don't want to "can" my produce - Louise
There are basically three options depending on the food. 1. Cold storage. Our ancestors used a cellar in their home or in a nearby hillside. This can still be done today. We have a crawl space under our home and we had it redone with new surrounding material. It is not 100% critter proof but almost.
Next I have a thermometer in the crawl space that registers in my kitchen. I have tracked it for a full year and it stays in the 50’s. So I can store fruits and vegetables - not fresh greens but solid foods such as apples, beets, winter squash, and other foods in this storage and they will keep for 3-4 months.
Second - dehydrator - this is fun since I can’t burn it. I can be a good cook and I can also be a distracted cook. My family knows the sound of the smoke alarm.
Dehydrating is fun - economical, and simple. The learning curve is how to use the foods once they are dried.
Third - freeze dried foods. This i have not done because of the expense of the machine to freeze dry. Yet it is the most nutritious and easy to use later of the three.

2. How do you recommend storing bread? I’d like to avoid plastic and keep it as fresh as possible. Thank you! - Elizabeth

I do use plastic for my storage and I fully understand your concerns. Foods such as bread do not absorb the chemicals from the plastics. You could always wrap the bread in organic paper towels then place in a plastic bag.
Plastic bags are very concerning if used with a sauce, cheese, meat or other food that is directly coming in contact with the plastic and has a ‘liquid, saucy’ substance.
Organic parchment paper would be best for wrapping bread then storing in a freezer grade bag.

3. How many meals do I eat per day when doing the Daniel fast? And can I have snacks? - Sally

The Daniel fast is between you and the Lord. Some people do fine with eating one meal a day while others need three meals a day.
