Today, we're going to make a spice and it's an amazing spice from Israel. And I know you're going to love it. This is called za'atar. And so I'm excited to share this with you because it's going to be a recipe that we're going to use in many recipes to come.
Now you can go ahead and buy the spice already pre mixed, ready to go. And it's called za'atar. Yet this is actually a plant the za'atar is a plant, it's a biblical plant.
And today, we get to make our own blend using different spices. Now this would have been used the hyssop plant we read about this several times in Scripture. So in Leviticus 14 one through six it talks about cleansing the lepers and numbers it talks about purifying yourself if you had been in touch with a dead person, that's numbers 19. And then Exodus which I just shared with you is about sprinkling the blood on the doorposts.
But what I want to share with you is when you travel Israel, you're going to see the spice in a lot of different dishes yet you can make your own blend in your own kitchen and just enjoy the aroma of the spice and enjoy on some savory yogurt on a pita bread.
So what we're going to do to make it ourselves, I went out into the garden and I cut some fresh thyme. And so what I would do is dehydrate this I could either put it in a brown bag and let it stay in a dry area for about two to three weeks it would dehydrate on its own so you don't have to buy a dehydrator or you can use your own dehydrator.
Za'atar Recipe
1/4 cup toasted sesame seeds
1/2 teaspoon salt
2 tablespoons sumac
Dehydrated thyme
Obviously you can make these these measurements with the way you like it if you want to add more time if you want to add more sumac however you want to do it. Alright, so we're gonna go ahead and make it a little bit more powdery. So I'm going to use my coffee grinder which I use for flaxseeds. I'm not going to do all of it though unlike a little bit of the pieces. I use this for flaxseed or chia seeds
So mix that back in with the bigger pieces. You don't want to blend that too long because the seeds do have an oil on it and you do not want that to turn your spice mix oily so I'm gonna go ahead and put this in my spice jar and just save your spice jars from products that you buy that you're done with so that you can and store products that you're making blends like this. And then just use it on all of your different mixes.
If you're wondering where do you get sumac, you can find this at the Mediterranean stores, sometimes you can buy it online, and some of you may have noticed I might have forgot to tell you how much time so we're using anywhere from two to three tablespoons of time to get a good blend. And you should have well as you can tell, I made enough for two of these spice jars. But I'm going to use this in the Jerusalem flatbread, so make sure you're subscribed down below. And remember when we enjoy a spice like this, and we realize this is teaching us more about the word more about how God's foods were created for healing.
