Recipe:
What you’ll need:
1 bag of pasta (orecchiette is my fave but you can use, egg noodle, penne, etc)
1 large yellow onion (chopped)
2 cloves of garlic (minced)
1 lb Italian sausage
2 cups of spinach
1/4 cup grated Parmesan cheese
Salt
Pepper
Red pepper flakes
Bring a large pot of salted water to a boil & cook pasta according to package directions.
Heat 2 tablespoons of olive oil in a large skillet & add chopped onions & garlic. Once softened, add sausage and break up into smaller pieces with a wooden spoon - add salt and pepper to taste - and cook for 5-7 minutes. Add spinach and cover with lid to wild for 2-3 minutes. Drain pasta reserving 1 cup of pasta water. Add cheese & 1/4 cup of pasta water to your pan & let cook for 5 minutes (adding more depending on your preferred consistency.) Add pasta into the sausage mixture and combine. Serve & top with extra cheese!
