RECIPE // (everything is approximate and can easily be customized to your liking)<br />
<br />
main ingredients:<br />
- salmon filet <br />
- couscous or acini de pepe<br />
- bell peppers<br />
- garbanzo beans<br />
- cauliflower<br />
- arugula <br />
- salt<br />
- pepper<br />
- olive oil<br />
sauce:<br />
- olive oil<br />
- dijon mustard<br />
- minced garlic <br />
- lemon juice<br />
<br />
instructions:<br />
- preheat oven to 400 degrees fahrenheit <br />
- chop veggies and place on a baking sheet. drizzle with olive oil and salt/pepper to taste<br />
- place in oven and roast for 20ish mins, stirring halfway <br />
- cook couscous or acini de pepe according to package instructions <br />
- while veggies are roasting and couscous is cooking get started on the sauce<br />
- whisk together about a cup-ish of olive oil, juice from two lemons, 5ish minced garlic cloves, and 1/4 cup of dijon mustard<br />
- pour half of sauce over salmon and save other half to drizzle over bowl<br />
- bake salmon at 400 degrees for 15-20 mins depending on thickness<br />
- once salmon is done begin plating<br />
- add couscous and a bed of arugula, topping with roasted veggies and salmon<br />
- drizzle with remaining sauce and enjoy ✨<br />
