Yes, these high protein foods and high fiber are excellent for Daniel Fast. They can be used in many ways - soups, salads, sauces when powdered and used as flour, and even a stabilizer in cookies - although I would only use a few.

Adding these foods to the Daniel Fast will help the family feel more satisfied. My favorite recipe is the black bean soup. - take 3 cans of black beans or 5 cups of cooked black beans, add 1.5 cups of salsa and then 1 quart of vegetable broth.
Cook till heated and then mix with an immersion blender. Top with chives or parsley and chopped onions. It was so delicious. And very economical.
When You are not on the Daniel fast cooked ground meat can be added.

It is without a doubt that plant foods are the highest in delivering antioxidants for health prevention and immunity boost. Scripture does mention meats - Jesus ate meats such as lamb - so this is an option. Meat must be raised in an environment that is good for the animal and then handled with precise cleanliness for us to obtain the best benefit.
With meat - it is what was the animal fed, were they allowed to graze freely outdoors and how was the stress managed when they reached the butcher place. All three elements are important for healthful meat for our diet. And I top that with what food Jesus would have consumed.
He knew best.
Most omnivorous diets have a large salad on the menu yet fruits are not harmful, nor are lentils or beans. And of course I love freshly milled grains.

I will always lean to the Mediterranean diet since it has the longest proof of healthful benefits.

First I wish I knew if you were eating store bought sprouted bread or milling your own sprouted grains. That is the first difference.
I Don't recommend bread from the stores since what you make fresh is 100% better.
Second - Gluten is a protein. Sprouted grains are seeds that form the embryo to grow into a plant. The growth phase of the seed uses some of the proteins - gluten. So sprouted grains will have less gluten because of the maturation of the embryo.

Some people tolerate sprouted grains better but unsprouted grains are very healthful as well.
Since you brought up the subject of sprouted grains it is important to realize biblical bread was not sprouted.
There are some key authors such as Sally Fallon and Jordin Rubin that teach that grains were always sprouted since they bundled the stalks of grain together before bringing them inside and this allowed the grains to start the process of sprouting. Which made them more healthy. This is not true. You cannot start the process of sprouting without finishing. It and you cannot mill wet grain. Wet grain does not store. Biblical days grains were stored for up to 7 years as you might remember in the days of Joseph. These are dry unsprouted grains. And they sustained everyone in the country.

The theory of the lectins causing harm is just that - a theory.
It is not a proven fact. In 5-10 years we will know more about this.
It is similar to GI glycemic index - it was a theory and proven wrong. Then came the glycemic load - which was more accurate. Yet, in the meantime everyone quit eating carrots and watermelon.
The three principles that are timeless include:
Eat the foods God called Good for us
Eat the foods as close to his design before they are altered beyond their health benefit
Don’t let any food become an addiction.
