We will also make a large bowl of basic egg salad that can feed several people for one meal, often for less than $10, or provide several days of lunches for one or two people.

Eggs are one of the most nutrient-dense foods available. Along with complete protein, they provide choline, vitamin B12, riboflavin, selenium, vitamin A, vitamin D, and healthy fats. They are filling, versatile, easy to store, and can be used in many different meals.
