So, what are lectins, anyway? Lectins are natural proteins found in many plants. They actually help plants defend themselves against pests and insects. And guess what? Lectins are in a lot of foods we eat every day, including:<br />
Beans and legumes, like kidney beans, lentils, chickpeas, and peanuts<br />
Whole grains, including wheat berries, oats, rice, farro, millet, and quinoa<br />
Nightshades, which include tomatoes, eggplant, potatoes, and peppers<br />
Lectins aren’t some foreign toxin; they’re a natural part of the foods God created.<br />

The Problem with Misinformation<br />
Research highlighting the negative effects of lectins often relies on isolated lectin extracts rather than whole food sources. These extracts can exhibit harmful properties when ingested in high concentrations or without proper preparation. For instance, studies have used raw kidney bean powder or injected isolated lectins into animals, which doesn't reflect normal dietary practices. It’s crucial to note that when legumes and other plant foods containing lectins are prepared correctly—through methods like cooking or soaking—they can provide valuable health benefits without the adverse effects often reported in isolated studies.<br />

The Fad Diet Trend: Calling Good Bad and Bad Good<br />
Just as many people quickly label bread as the enemy, there’s now a trend of labeling all wheat, legumes, and nightshades (like tomatoes and eggplants) as bad. If you have been part of the family for a while you know the real issue with bread lies in how we've processed it. Store-bought bread often lacks essential nutrients; once wheat is ground, it loses 90% of its nutritional value within just three days. In contrast, fresh-milled flour is rich in fiber and provides 40 of the 43 essential nutrients our bodies need daily. Plus, Jesus referred to Himself as the "bread of life"—He wouldn’t associate Himself with anything harmful!<br />

Cooking destroys most of the lectins that could cause any issues. The trend labeling lectins as harmful is merely a rebranded low-carb diet that doesn’t align with biblical principles. God created these foods for our nourishment, and when prepared properly, they support our health. Instead of dismissing God’s creations, let’s appreciate the nourishment they provide and focus on how these foods contribute to our well-being when included in a balanced diet.<br />
