The Base: What Goes Into a Gluten Free Flour Mix?
If you're asking, “How do I make gluten free flour?” – start here. A good flour mix typically includes three main components:
A mild, neutral grain – such as rice flour
A nutrient-dense flour – like oat or millet flour
A binding agent – tapioca starch and xanthan gum work beautifully together
Let’s break down each part.
🌾 Oat Flour
Oats are naturally gluten free, but they’re often processed in facilities that also process wheat. To keep your flour mix safe, choose certified gluten free oats. I love the rich, hearty flavor oat flour brings to baked goods—it’s a staple in my pantry!
DIY Tip: Mill your own oats using a blender, Vitamix, or grain mill for a fresher, more economical option.
🍚 Rice Flour
Rice flour forms the backbone of most gluten free blends. You can use:
White rice flour (neutral flavor)
Brown rice flour (more fiber and nutrition)
Sweet rice flour (stickier texture)
Budget Tip: Mill your own rice at home—white or brown both work well.
🌱 Millet Flour
Millet adds a slightly sweet, nutty flavor and pairs wonderfully with oat and rice flours. It’s another favorite in my mix, and I mill it fresh using my Mockmill.
🌿 Tapioca Flour (Cassava)
Tapioca adds lightness and chewiness. Be careful though—too much can make your batter gummy. Tapioca flour is made from cassava root, which is also sometimes sold as cassava flour. Both are interchangeable in this context.
My Go-To Gluten Free Flour Mix Recipe
Here’s how to make gluten free flour mix that works great for most recipes:
Ingredients:
2 cups white rice flour
1 cup oat flour
½ cup millet flour
½ cup tapioca flour
1 tsp xanthan gum (optional but recommended)
Instructions:
Combine all the flours in a large mixing bowl.
Use a whisk or a fun tool like my Fiskie (my personal favorite!) to mix everything thoroughly.
Store your mix in an airtight container in the fridge or freezer to preserve freshness.
