Sukkot Cake (Hummingbird Cake Recipe)

3 eggs
1 tsp vanilla extract
1/3 cup olive oil
1 cup butter (room temperature)
8 ounces crushed pineapples
1 tsp salt
2 tsps cinnamon powder
1 tsp baking soda
1/2 tsp baking powder
2 cups flour (soft white/ spelt or kamut)
1/2 cup finely chopped nuts
1 cup sucanat
1 banana
1 cup chopped apple
1 cup shredded coconut

Bake at 350 for 1 hour... And enjoy!
