Holiday Cranberry Salad: A Festive Delight<br />
<br />
When your recipe file is covered in kitchen mess, you know you've found the perfect dish! That perfectly describes my Holiday Cranberry Mold recipe. With fresh cranberries in season, this is my go-to treat for birthdays, celebrations, or a delightful Sunday dessert.<br />
<br />
Ingredients:<br />
1 can (20 oz) crushed pineapple, drained (save the juice)<br />
12 oz fresh cranberries<br />
3 pkg. unflavored gelatin<br />
½ cup honey or maple syrup<br />
1 orange, peeled and cut into chunks<br />
1 unpeeled grated apple<br />
½ cup chopped nuts (walnuts or pecans)<br />
Directions:<br />
Stir gelatin into ¼ cup of the reserved pineapple juice.<br />
In a saucepan, combine the remaining pineapple juice and cranberries. Boil over medium heat until cranberry skins pop (about 5 minutes).<br />
Stir the softened gelatin and honey into the hot cranberries and cook for another minute.<br />
Blend 1 cup of the cranberry mixture with the orange chunks until smooth.<br />
Add the remaining cranberry mixture to the blender and pulse briefly to break up the cranberries.<br />
Pour the mixture into a bowl, add the pineapple, apple, and nuts, then transfer to a decorative mold.<br />
Chill until set and serve with mint leaves, orange slices, or kiwi slices for a festive touch.<br />
