In this video, you will learn the super simple science behind straining dairy. The secret lies in separating the solid parts of the yogurt from the liquid part, which is called whey. By controlling the amount of time you let the liquid drain out, you can choose to make either a smooth, tangy sour cream or a thick, rich block of cream cheese. It is incredibly easy, budget-friendly, and tastes so much better than anything you can buy in a plastic tub at the supermarket.
We will cover two different methods to get this done. First, we will look at the traditional cheesecloth or kitchen towel method, which requires absolutely no special equipment. Second, we will look at using a simple mesh strainer setup. Both methods work perfectly, so you can just use whatever tools you already have on hand in your kitchen.
