There are three reasons you should consider making your own cornbread:

Ingredients
3/4 cup freshly milled cornmeal (yellow or white)
1/4 cup freshly milled flour (spelt, buckwheat, or whole wheat optional)
3/4 tsp salt
2 1/2 tsp baking powder
3/4 cup milk (buttermilk, whole milk, or nut milk)
1 egg (preferably farm-fresh)
2 tbsp honey (optional)
2–3 tbsp melted butter (for a crispy edge and richer flavor)
Instructions
Preheat your oven to 425°F (220°C).
Mix your freshly milled flour and cornmeal in a bowl.
Add salt and baking powder, whisk thoroughly.
Stir in milk, egg, and honey, blending until smooth.
Add melted butter and mix gently.
Pour batter into your choice of pan:
Iron skillet for classic cornbread
Square or muffin pan for bite-sized servings
Muffin tops pan for fun individual portions
Bake:
Mini muffins: ~10 minutes
8x8 pan or skillet: ~25 minutes
Check for a golden-brown crust and remove from oven. Enjoy warm!
