This easy savory pie recipe features soft, hand-shaped pastries filled with spinach, herbs, olive oil, and warming spices. Known as spinach fatayer, these traditional Middle Eastern savory pies are simple, forgiving, and endlessly adaptable—perfect as a wholesome meal, snack, or family favorite.
Chef Moshe Basson shares the deeper story behind this middle eastern savory pie, drawing from Jerusalem food traditions, biblical nutrition, and foraging wisdom passed down through generations. Traditionally made with wild greens like mallow, this spinach fatayer recipe uses accessible ingredients while staying true to its roots.
🥧 Easy Savory Fatayer Recipe (Spinach Filling)
This homemade fatayer recipe includes a soft fatayer dough recipe and a flavorful spinach fatayer filling recipe, creating a healthy and satisfying savory pie.
Dough Ingredients
4 cups spelt flour (or all-purpose flour)
1 tablespoon yeast
1 tablespoon sugar (or dried sugar cane / sucanat)
1 tablespoon salt
½ tablespoon turmeric
½ tablespoon olive oil (up to more for a richer dough)
Approximately 1½ cups warm water (adjust as needed)
Instructions:
Mix yeast and sugar first. Add flour, salt, turmeric, olive oil, and water. Knead until soft and pliable. Cover and let rest until relaxed and slightly risen.
Filling Ingredients
14 ounces coarsely chopped spinach
1 medium onion, finely chopped
1 garlic clove, crushed
1 tablespoon sumac
1 teaspoon salt
¼ teaspoon ground black pepper
½ tablespoon za’atar
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
Optional: extra turmeric
Instructions:
Mix all filling ingredients thoroughly. Taste and adjust seasoning if needed.
Assemble & Bake
Roll dough thin (similar to pasta dough).
Cut into circles.
Add filling to the center and fold into triangles.
Bake at 180°C / 350–375°F until golden and fragrant.
