🥒 Fermented Cucumbers
Ingredients

Sliced or whole cucumbers (organic if possible)

Prepared brine

Optional add-ins:

Fresh dill

Garlic cloves

Instructions

Pack cucumbers tightly into a jar.

Add optional garlic or dill for flavor.

Fill with brine until cucumbers are fully submerged.

Add fermentation lid or loose lid.

Let sit and ferment.

🥬 Fermented Cabbage + Pepper Slaw
Ingredients

Chopped cabbage

Chopped peppers

Garlic (optional)

Optional herbs: dill or parsley

Prepared brine

Instructions

Layer cabbage, peppers, garlic, and herbs into a jar.

Press mixture down firmly so vegetables are compact.

Pour in brine until contents are fully submerged.

Use a fermentation lid (recommended for this one because it floats).

Place jar on a counter for fermentation.

🥕 Fermented Carrots
Ingredients

Whole carrots, peeled or scrubbed

Prepared brine (from recipe above)

Instructions

Pack whole carrots tightly into a clean glass jar (leave no large gaps).

Break or trim carrots so all sit below the shoulder of the jar.

Pour the brine over the carrots, covering completely.

Add a fermentation lid OR loosely place a normal lid (not tightened).

Place on a tray in case bubbling over occurs.
