Start your morning with a powerful boost! 🌞 Today I’m sharing two simple, nourishing, and delicious breakfast recipes using sweet potatoes and butternut squash. These aren’t just tasty—they’re anti-cancer, brain-boosting, and fiber-rich foods that fuel your mind and body. If you’ve never tried having sweet potatoes or butternut squash for breakfast, I’m going to challenge that habit today.

Sweet potatoes and butternut squash are often overlooked in the morning, but they’re packed with vitamins A, B, C, and E, folate, carotenoids, and fiber. These nutrients help fight inflammation, support immunity, and provide long-lasting energy without the crash you’d get from sugary cereals or pastries. Even more exciting—they’re amazing for mental wellness and brain health, helping you focus, think clearly, and even learn new skills.

💡 If you’re tired of the same old breakfast routine and want something that’s actually good for your body and your brain, these two recipes will inspire you to eat in a whole new way.

🍠 Recipe 1: Sweet Potato Breakfast Scramble

Ingredients:

1 medium sweet potato, shredded

2 eggs (scrambled or cooked to your liking)

1 cup mixed leafy greens

1 clove garlic, minced

½ small onion, chopped

1 tbsp butter (or olive oil)

¼ cup roasted butternut squash cubes

A handful of dried cranberries (for garnish)

Salt and pepper to taste

Instructions:

Shred your sweet potato and set aside.

In a skillet, sauté garlic and onion in butter (or olive oil) until fragrant.

Add in the shredded sweet potato and cook until tender.

Toss in your leafy greens and stir until wilted.

Add your eggs and scramble everything together until cooked.

Mix in roasted butternut squash cubes for extra flavor and nutrition.

Plate your scramble and top with cranberries for a pop of color and sweetness.

🎃 Recipe 2: Butternut Squash Breakfast Salad

Ingredients:

1 cup roasted butternut squash cubes

2 tbsp dried cranberries

Optional: roasted sweet potato cubes for extra fiber

Instructions:

Roast your butternut squash (make sure to peel off all the green stripes for the best taste).

In a bowl, layer your salad greens as the base.

Add warm roasted butternut squash cubes on top.

Place your eggs on the salad—scrambled is my favorite, but boiled or poached works too.

Sprinkle cranberries for sweetness and color.

Add roasted sweet potatoes if desired for more flavor and texture.
