How about pesto pasta and rice?! Yep, this spinach cauliflower pesto pasta and rice recipe is mind-blowing. It's packed with flavor, amazing aroma, and LOADS of nutrition!

Here's a quick pasta recipe you can make for lunch, dinner, or for special occasions. And best of all, it's another way to eat more cruciferous vegetables daily. Great for weight loss, gut health, and overall wellness.

This is not your usual pesto recipes or pasta recipes. I guarantee that you and your family will love this!

Easy Pesto Recipe - A Unique Pasta and Rice Recipe with Cruciferous Vegetables!

Spinach Cauliflower Twist Salad

(Best hot and good cold!)

Ingredients:

I package Spinach Farfalletti pasta – non-GMO
½ head cauliflower
6 ounces feta cheese – herb flavor is extra good
½ cup pesto sauce
3 tablespoons olive oil
2 Tablespoons white wine vinegar
3 tablespoons organic mayonnaise

Dressing:

Whisk basil pesto sauce, olive oil, vinegar, and mayonnaise together and set aside.

Directions:

1. Cook spinach pasta as directed. Drain
2. Dice cauliflower into cauliflower rice. My favorite tool is the Bosch Food Processor designedhealthyliving.com/inc/sdetail/2149/1584. Any food processor will make this a quick step.
3. Cook Cauliflower in a glass bowl in the microwave for 4-6 minutes till done.
4. Combine in large bowl cooked pasta, cooked cauliflower rice, and feta cheese (more if desired).
5. Toss hot salad with pesto dressing and serve hot for a delicious meal.

The spinach pasta has 9 grams of protein per 1 cup serving (dry pasta). Eating 2 cups of cooked pasta will deliver 9 grams of protein. The feta cheese and cauliflower will also add more protein. As a single dish meal, this satisfies protein, fiber, vegetable servings, and healthy fats.
