Today, we're going to use a grain that you may not be familiar with it's amaranth. Amaranth has such tiny little grains that when you see it compared to the wheat, you wonder how can so much good come out of such a small, tiny seed? Well, it can, and amaranth is gluten free. So for those of you who are gluten free, then we have a delicious chocolate amaranth muffin we're gonna make today.

Chocolate amaranth muffins ingredients:

1-1/2 cups amaranth flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon cinnamon powder
2 tablespoons cocoa powder (choose fair trade)
1/2 cup coconut oil
2 eggs, slightly beaten
3/4 cup honey
1 cup shredded zucchini
1/2 teaspoon vanilla extract
1 mashed banana
Optional: 1/2 cup chocolate chips

Now we're going to put them in some mini muffin tins and then we're going to bake it at 325 for 10 to 15 minutes. Enjoy!
