The One Dough Recipe (Base for All 5 Breads)

For today’s recipe, we only need four ingredients. I’m adding a fifth because it’s my husband’s preference — but it’s optional.

3 cups warm water (or potato water, milk, or kefir milk)

2 tablespoons yeast

1½ tablespoons salt

6 cups flour (I used freshly milled hard white wheat)

This is a wet, sticky dough — and that’s exactly what makes it one of the best easy bread recipes to make at home. We are NOT kneading this dough. Simply stir until well combined, making sure no dry flour remains.

Unlike banana bread or pumpkin bread (which use baking soda or baking powder), this dough uses yeast. Normally yeast bread requires kneading — but not this one. That’s why it’s a “quick bread” without technically being a quick bread.

Let the dough sit for 2 hours in a warm place. Cover it loosely — don’t seal the lid tightly because the yeast will create gas as it rises. After 2 hours, it’s ready to use!

If you use whole grains like hard white wheat, store your grain properly in 5-gallon buckets with gamma lids to keep it fresh long-term.

Now let’s turn this simple dough into 5 delicious breads.

Recipe #1: Simple Loaf of Bread

Use dough made earlier

Shape into a loaf

Top with seeds (chia, sesame, flax)

Bake at 375°F for 20–27 minutes

This is a beautiful everyday sandwich loaf — soft inside with a lightly crisp crust.

Recipe #2: Cinnamon Rolls

Use ¼ of the dough

Spread with applesauce

Add homemade toppings (cereal, oats, coconut)

Bake at 400°F for 10–15 minutes

These are quick, lightly sweet cinnamon rolls perfect for breakfast or a weekend treat.

Recipe #3: Garlic Knots

Portion dough into small balls

Bake for 10 minutes

Brush with olive oil mixture:

Garlic Oil Topping:

¼ cup olive oil

1 tsp salt

2 tbsp garlic powder

Minced oregano, parsley, basil, rosemary

These garlic knots are perfect for dinner nights, gatherings, or dipping into soup.

Recipe #4: Savory Flatbread

(Similar to Jerusalem flatbread)

Use a portion of dough

Top with Z’atar spice blend

Add cheese and olive oil

Bake at 375°F for 15–20 minutes

This savory flatbread makes a delicious side dish or appetizer.

Recipe #5: Dutch Oven Bread

Use the dough made earlier

Bake at 350°F

Check for doneness

This creates a rustic artisan-style loaf with a crispy crust and soft interior.
