Easy Apple Cake Recipe with Fresh Apples

Fall is a season of cozy gatherings and delicious treats, and what better way to celebrate than with a warm slice of Harvest Coffee Cake? This recipe combines the best of autumn flavors like apples, cranberries, and nuts, all topped with a soft, buttery cake that will make your kitchen smell heavenly. Whether you're hosting a gathering or simply enjoying it with family, this cake is sure to be a hit!

Ingredients:
1 cup cranberries
1 cup chopped apples (more if desired)
3/4 cup butter, softened
3 eggs
1 tsp vanilla
1 cup sucanat (or substitute with stevia or monk fruit)
2 cups flour (or gluten-free flour for a GF option)
1 tsp baking powder
1/2 tsp salt
1/2 cup chopped nuts (optional)
Instructions:
Preheat your oven to 350°F (175°C) and grease a 9x13 pan.
Sprinkle cranberries and apples evenly across the bottom of the pan. Top with chopped nuts if using.
In a bowl, cream together butter, eggs, vanilla, and sucanat.
Gradually add in the flour, baking powder, and salt, stirring until just combined. The batter will be thick.
Drop the batter by spoonfuls over the fruit and nuts, spreading it gently.
Bake for 35 minutes or until golden brown and a toothpick comes out clean.
Let cool slightly, then serve warm. Perfect with a cup of coffee or tea!
This Harvest Coffee Cake is not only versatile, but you can also tweak it to make it gluten-free or use different sweeteners like stevia or monk fruit. It’s a lovely dish for hosting friends and family, and the combination of fruits and fiber-rich ingredients make it a healthy choice for fall.

Enjoy this cozy treat, and don’t forget to share it around your table while reflecting on the blessings of the season!

Pro Tip: Consider using apple butter as a substitute for the sucanat for a richer, fruitier flavor. Plus, it adds a healthier sweetness to the cake!
