Apple Cake Recipe Easy To Make<br />

Nothing says fall quite like a warm, freshly-baked coffee cake filled with tart cranberries, sweet apples, and crunchy nuts. This Harvest Coffee Cake is a cozy delight that’s perfect for autumn mornings, whether enjoyed with a cup of coffee, tea, or just as a delicious start to the day.<br />

With natural ingredients like honey and sucanat (an unrefined cane sugar with a deeper, molasses-like flavor), this recipe offers sweetness and warmth that’s hard to resist. Let’s dive into this flavorful, satisfying cake that’s perfect for chilly mornings or festive gatherings!<br />

Ingredients:<br />
2 cups (470 ml) cranberries<br />
1 cup (240 ml) chopped apple<br />
1 cup (240 ml) chopped nuts (your choice – walnuts or pecans work beautifully!)<br />
2 ⁄3 cup (150 ml) sucanat<br />
¼ cup (60 ml) applesauce<br />
¾ cup (180 ml) softened butter<br />
2 ⁄3 cup (150 ml) sucanat with honey or honey crystals<br />
3 large eggs<br />
1 teaspoon vanilla extract<br />
1 1 ⁄3 cup (315 ml) pastry flour<br />
1 teaspoon baking powder<br />
½ teaspoon salt<br />
Directions:<br />
Preheat the Oven<br />
Set your oven to 350°F (180°C).<br />

Layer the Fruit and Nuts<br />
In a 9” x 13” baking pan, evenly sprinkle the cranberries, chopped apple, and nuts, then top with 2⁄3 cup sucanat. This fruity, nutty layer will become the delicious base of your coffee cake.<br />

In a large bowl, cream together the applesauce, softened butter, and remaining sucanat until smooth and fluffy. Beat in the eggs one at a time, then add the vanilla.<br />
