Easy Apple Cake Recipe with Fresh Apples<br />

Fall is a season of cozy gatherings and delicious treats, and what better way to celebrate than with a warm slice of Harvest Coffee Cake? This recipe combines the best of autumn flavors like apples, cranberries, and nuts, all topped with a soft, buttery cake that will make your kitchen smell heavenly. Whether you're hosting a gathering or simply enjoying it with family, this cake is sure to be a hit!<br />

Ingredients:<br />
1 cup cranberries<br />
1 cup chopped apples (more if desired)<br />
3/4 cup butter, softened<br />
3 eggs<br />
1 tsp vanilla<br />
1 cup sucanat (or substitute with stevia or monk fruit)<br />
2 cups flour (or gluten-free flour for a GF option)<br />
1 tsp baking powder<br />
1/2 tsp salt<br />
1/2 cup chopped nuts (optional)<br />
Instructions:<br />
Preheat your oven to 350°F (175°C) and grease a 9x13 pan.<br />
Sprinkle cranberries and apples evenly across the bottom of the pan. Top with chopped nuts if using.<br />
In a bowl, cream together butter, eggs, vanilla, and sucanat.<br />
Gradually add in the flour, baking powder, and salt, stirring until just combined. The batter will be thick.<br />
Drop the batter by spoonfuls over the fruit and nuts, spreading it gently.<br />
Bake for 35 minutes or until golden brown and a toothpick comes out clean.<br />
Let cool slightly, then serve warm. Perfect with a cup of coffee or tea!<br />
