🍚 Ingredients
For the Rice
• 2 cups white rice (jasmine or basmati work well)
• Chicken broth (enough to cover rice by ~1 inch)
• Optional: pinch of salt
For the Yogurt Sauce (Tzatziki-Inspired)
• 1 cup plain Greek yogurt
• ½ lemon, juiced (save other half for chicken)
• 1 clove garlic, pressed or finely minced
• ¼–⅓ cup cucumber, finely diced
• 1 tbsp olive oil
• ½ tsp garlic powder
• Pinch of salt
• 1–2 tbsp fresh dill, chopped (more if preferred)
• Optional: small amount of chopped parsley (if desired)
For the Chicken & Veggies
• 1–1½ lbs chicken breast or tenderloins, cut into bite-sized pieces
• ½ lemon, juiced
• 1–2 tbsp Kinder’s Lemon Pepper seasoning (or to taste)
• 1 tbsp butter (for cooking)
• 1 bell pepper, sliced
• 1 zucchini, peeled (optional) and sliced
• Salt, to taste
• Optional: extra lemon pepper seasoning or black pepper

🔪 Instructions
1. Cook the Rice
• Rinse the rice well.
• Add to pot with chicken broth until the liquid covers rice by about 1 inch.
• Bring to a boil, then reduce heat to low, cover, and simmer until fully cooked (~15 minutes or until liquid is absorbed).

2. Make the Yogurt Sauce
• In a medium bowl, combine Greek yogurt, lemon juice (½ lemon), garlic, diced cucumber, olive oil, garlic powder, salt, and chopped dill.
• Mix until well combined. Adjust seasoning and dill to taste.
• Optional: Add a bit of chopped parsley.
• Set aside or refrigerate until ready to serve.

3. Prepare the Chicken and Veggies
• In a large skillet (preferably cast iron), melt butter over medium-high heat.
• Add chicken pieces. Season generously with lemon pepper seasoning and squeeze in the remaining ½ lemon juice.
• Cook chicken for a few minutes until it starts to brown.
• Add sliced bell peppers and cook until softened.
• Add zucchini last (to avoid overcooking) and sauté until just tender.
• Season with a pinch of salt and extra lemon pepper if desired.

4. Assemble the Bowls
• In each bowl, layer:
• A scoop of rice
• A generous helping of chicken and veggies
• A dollop (or more!) of yogurt sauce on the side or drizzled on top
• Mix together, wrap in a pita, or eat as-is with a fork (or spoon, if you’re Team Ellie).
